For any cake that I make witch requires cream I like to use this simple biscuit recipe. I use it in all sorts of shapes and sizes, depending on my needs. It is versatile and works nicely with a huge range of creams.
INGREDIENTS:
200 gram sugar
200 gram flour (all purpose or self rising both work)
4 eggs
THE PROCESS:
Whisk the eggs whites on high speed while adding the sugar
Add the egg yolks one by one while stirring
Sift the flower and add it bit by bit while slowly stirring
Prepare your form and add the dough
Bake at 200 degrees Celsius for approximately 35-40 min for a 22 cm spring form in the middle.
NOTES:
I bake it on 200 Degrees Celsius for 12 min on my small forms(12 cm) to 40 min on bigger forms (22 cm ).
This can be frozen, thus I always bake more then needed so I can freeze the extra biscuit.
